Our philosophy centres on crafting food that nourishes both body and spirit, using only the purest ingredients. We collaborate with premier artisan producers and prioritise certified organic ingredients wherever possible, each chosen for their exceptional taste, nutritional benefits and sustainable practices. PIZZAS

We understand that every great pizza is based on great dough. That’s why ours is made with the highest quality Italian and Slovenian ingredients from world-class suppliers, delivering an authentic pizza dough flavour.

We favour the traditional biga pre-fermentation process, using a very small amount of high-quality Lesaffre fresh yeast, high-protein Italian flour and around 60% pure Slovenian spring water. Our bakers then allow the prepared dough to rise or ‘ferment’ twice in strictly controlled phases. First, the dough proofs for two hours at room temperature. After this initial process, we give it an additional 24-48 hours of cold fermentation. This extra time is one of the secrets to what gives our dough its unique structure, flavour and quality.

Why? Well, slow, cold fermentation results in a tastier, more nutrient-dense dough to develop and a lighter gluten structure (the more air pockets the better!), which is easier to digest.

How? When the yeast breaks down the sugars in the dough, carbon dioxide bubbles, alcohol and acids are released, creating the rise and flavour of the dough. Combined with a cooler proofing temperature, we’re able to achieve the perfect balance of delicious softness and lightness with a bubbly, crispy crust.
Our toppings enjoy the same rigorous sourcing processes, and we use only the finest velvety mozzarella and ripe, juicy Pelati tomatoes as standard, with a seasonal selection of toppings to satisfy vegans and traditionalists alike.

Each pizza is then cooked to perfection in our custom-made, gas-fired oven from Naples at Glavni trg or in our high-performance Scandinavian electric oven at Qlandia, so within minutes you can enjoy yours with one of our refreshing craft beers.

Focaccias

With its roots dating back to ancient Rome, our focaccia – or flatbread, or pizza al taglio – has a light, crisp and airy texture that tastes incredible. At Kralj Matjaž, we call it King’s Flatbread.

As with our pizzas, our focaccia dough is crafted by our skilled bakers, using no less than five types of stone milled, organic flour (three sourced locally and two from our Italian suppliers) combined with a pinch of yeast and around 80% water.

Through a carefully guided process of rising and maturation, our dough reaches a precise point, yielding a focaccia that is easy to digest and reflects our commitment to wellbeing.

Seasonal toppings, balancing freshness and flavour, complete our focaccias. Baked in a specialised oven, they are only available at Supernova Qlandia.

Accompanying yours with a craft beer is optional – but recommended.

Burgers

Every single one of our Bradass burgers begins in our Križ Kraž bakery. Buttery brioche buns made from lighter-than-air dough that melt in your mouth. Encasing succulent, organic beef patties, crisp lettuce and juicy tomatoes drenched in our homemade sauces.

Badass food at its best.

We challenge you to resist the Bradass burger. We doubt you’ll be able to.

Plant-based dishes

At Kralj Matjaž, we believe in the inclusive spirit of shared meals, and welcome all who embrace a plant-based lifestyle. Our menu features a thoughtful selection of vegan dishes, each crafted with the same dedication to flavour and quality as our traditional offerings.

Among our favourites, you’ll discover vegan pizzas using our signature dough, comforting plant-based hot dogs and fluffy bao buns with deliciously innovative fillings.

We’re proud to partner with local supplier Grashka, a plant-based culinary specialist from Ljubljana. Through meaningful collaborations, we continue to refine and elevate our plant-based dishes, ensuring they reflect our dedication to tasty and nutritious cuisine.

Our menu is constantly evolving. Alongside our signature classics, you’ll always find something new to try, from our healthy Mama’s bowls to flavour-packed bao buns, hearty hot dogs and irresistible desserts freshly baked at our Križ Kraž Bakery.

Coffee

The coffee we serve is roasted exclusively for us by coffee connoisseurs Pražarna in Ljubljana. This ensures that each brew is always freshly roasted, delivering the perfect balance of quality and flavour.

After extensive testing, we settled on a blend that we truly love, using speciality-grade beans from Brazil and Cameroon. At Pražarna, they are roasted a little longer to enhance their distinctive flavour notes.
